Since I usually don’t get home till 7 o’clock or later most week nights, Sundays, I try to make a few things that I can take with me for lunch and/or have for dinner during the week. Fresh tossed salads, although healthy and tasty, are ridiculously overpriced in Manhattan. Bringing my lunch is both good for my waist and my wallet.
My mom bought me Vegetarian: Tasty Recipes for Every Day by Helen Aiken when we were at Barnes & Noble last week. It was one of the “Bargain Priced” books they keep by the door. I never understand why they put displays there. I always think people are going to walk right out with them. Then again, maybe that is why they put them there, just to get rid of them. But I digress….
For the record, I am not a vegetarian, however, I am trying to incorporate more veggies in to my meals. So, here are a few of the recipes I am trying out this week:
- Mixed Berry Couscous (Breakfast)
- Roasted Beetroot Salad
- Stir-fried Green Beans with Shiitake Mushrooms
- Stir-fried Tofu with Orange and Fresh Pineapple
If I feel like any of them are winners, I will be sure to let everyone know.
In addition, I making Zucchini Muffins; I can smell it baking as I am writing this and it smells AAAA-Mazing! I don’t know why, but as of late I have had a crazy obsession with making Zucchini Bread or Muffins. Today I am testing a recipe from Simply Recipes. Can’t wait to try it!
